I wanted to make something with cranberries for the holidays, so I started with my basic chocolate stout recipe and threw in some cranberries after the primary fermentation was done. Here is what I did:
10 lbs Pale 2-row 1 lbs Chocolate Malt 1 lbs Flaked Oats 0.5 lbs Caramel 120 0.5 lbs Carapils 0.5 lbs Roasted Barley
Yeast: S-04
Mashed with 17qts at 152F, sparged with 4 gallons Boiled 60 minutes
Hops: 2 oz Willamette, 60 min
After 2 weeks in primary, I racked to secondary on top of 2.5 lbs cranberries (I sanitized them by freezing) for a week. At bottling, I added a half cup of lactose for a little sweetness to balance out some of the tartness from the cranberries.

Unfortunately you've been cursed with a weekend beer when people are out and about. I'm sure the feedback will come rolling in over the next day or two.
This was an interesting beer. I could definitely smell the berries when I opened the beer and poured it, but it's very faint in the actual taste. I'd love to know what it tasted like before you added the lactose... but it if was tangy, then balancing it out was probably a good idea. It's got some very nice roastiness (word?) to it, but still drinks nice and smooth, not heavy like a lot of stouts. The cranberries are a nice holiday touch to add some uniqueness, too. Good job!

I picked up some tart flavors which balanced nicely with the roastiness (yup, it's a word).

Nice berry aroma.
Nice body, well rounded mouthfeel.
Hmmmmmm.....roastiness with a bit of chocolate.
Tart, cranberry flavor persists throughout. If I didn't know it was cranberry I would describe it as slightly sour. If it were me I would add more cranberry to help it stand out more.

My first sip lied and told me this was a smoky porter---But the darkness told me it was a stout---The tart aftertaste must be the work of the cranberries---I wonder if there would be a more upfront cranberry flavor if more berries were added---or if it would become more tart?---This is a heck of a beer that I think is going to be even better in a few more months !

I'm enjoying this stout, nice and roasty with plenty of mouth feel with a touch of beery aroma and tart finish. Well done! The lactose at bottling is a great idea.

The flavor of the stout is good -- some nice chocolatey notes -- but I think the cranberry flavor is a little light for me. If I didn't know it was cranberry, I'd think it just had a weird tart finish. That's not to say I didn't enjoy it, though! Thank you.

I drank this beer before you posted the recipe - I thought it was a nice, simple porter. Probably says more about my palate than your recipe. I Didn't find the cranberries until you pointed them out. In my opinion, flavors like this should always be so subtle. Just enough to make the beer interesting, but not so much that they dominate.
I say well done.

Sitting here with this beer letting it warm a bit to help some of the flavors come through. Overall it has a great feel to it. Enjoying the roasty notes of the malt and the slight tartness of the cranberry. As a fan of sours, I say go big. Im thinking I want to try this beer with double the cranberries and using Lacto or Brett on it. Very good beer. Enjoying this one immensely.

It sure doesn't-- we learned that lesson well this season. Also, cranberries aren't available until later in the season which makes it difficult for planning out holiday beers.

Really digging this. The stout is solid as is, but the tartness of the cranberries adds a pleasant surprise on each aftertaste. I'm going to come back to this recipe later on!
