Day 14: Citra Pale by Renee Dubois
Ingredients 8 lbs American 2-row 8 oz Crystal 10
3 oz Citra hops (30, 5, 1)
1 package Wyeast American Ale yeast (1056)
Notes from the brewer: A simple pale ale using only Citra hops.

This one was overcarbonated. Produced a huge 5 or 6 inch thick head that just lasted & lasted. I didn't know what it was supposed to be when I drank it but said to my wife, "I'm guessing a pale ale" though the high carbonation caused the yeast in the bottom of the bottle to get into the rest of the beer, so that masked a bit of other character. The aroma was nice, some nice juicy fruit character -- not too citrusy but definitely fruity.

I guessed IPA, and a very good pale ale for sure, nice hop flavoring where I definitely get the citrus hit. Over carbonated too. I used to get over carbonation issues after a few months in the bottle and I started putting in less sugar. I used to just dump in the full 5 oz. pack then I started measuring out roughly 2/3rd of a cup and that really solved that a lot.
